The cassoulet was had at "La Potager Du Marais" (22, Rue Rambuteau). Well worth a visit next time you're in Paris. Where in Paris did you find that? I remember walking around for ages in Paris looking for vegan food, and ending up with something more akin to the photo at the top, which illustrates beautifully the "just take away the protein" approach to accommodating vegetarians.
