Easy Fish Tacos

How sad things must seem when my last two recipes are “for one”. Rather than be discouraged by lone cookery, I embrace it. Here’s a quick healthy meal for chowing down on in front of the tv.

Easy Fish Tacos
Serves 1

Ingredients:
1 talapia filet
1 7oz can Herdez Salsa Casera
1/2 cup sweet corn
1 clove garlic, chopped
fajita spice
chopped cabbage or lettuce
3 corn tortillas

Directions:
1. Preheat oven to 350.
2. Grease a casserole dish and set fish filet inside of it.
3. Spring the fish, first with garlic, then the salsa, then the corn.
4. Sprinkle with salt and fajita spice.
5. Bake in oven until fish flakes easily with a fork (about 25 minutes).
6. Heat corn tortillas in the oven.
7. Assemble tacos with the fish, salsa and cabbage.

Yummy extras: black beans, avocado, chipotle aoili
